Description

Ingredients

  • 3 ripe bananas
  • 2 cups rolled oats
  • 1 cup Greek yogurt
  • 1/2 cup optional protein powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add Greek yogurt, eggs, vanilla extract, and honey or maple syrup to the mashed bananas. Mix well.
  4. Combine the rolled oats, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  9. Slice and enjoy warm or at room temperature.

Notes

Use very ripe bananas for added sweetness. Store in an airtight container at room temperature for up to three days, or freeze for up to three months.
