Description

Quick and easy French Dip Tortilla Roll Ups filled with savory roast beef, melty cheese, and a rich dipping jus, perfect for a cozy weeknight meal.

Ingredients

Scale
  • 8 small flour tortillas (68 inch), room temperature
  • 8 oz thinly sliced roast beef (deli-style)
  • 8 slices provolone or Swiss cheese (or shredded, about 1 1/2 cups)
  • 1 small onion, thinly sliced (optional, for sweetness)
  • 2 cups beef broth (low-sodium works fine)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce (optional for color and depth)
  • 1 tablespoon butter
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (to thicken slightly, optional)
  • 1 teaspoon garlic powder
  • 1 packet (about 1 oz) dry onion soup mix (optional for extra flavor)
  • Cooking spray or 1 tablespoon melted butter for brushing

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment and lightly spray or brush with melted butter.
  2. Warm the tortillas in a dry skillet or microwave for 10–15 seconds.
  3. Lay one tortilla flat, add roast beef, cheese, onion slices (if using), and sprinkle with garlic powder.
  4. Roll the tortilla tightly from one end to the other and place seam-side down on the baking sheet.
  5. Brush the tops with melted butter or spray with cooking spray.
  6. Bake for 10–12 minutes until cheese melts and tortillas are lightly golden. Broil for 1 minute for extra crispness if desired.
  7. Meanwhile, prepare the dipping jus by combining beef broth, Worcestershire, soy sauce, and onion soup mix in a saucepan. Simmer and stir in cornstarch slurry if desired.
  8. Serve hot with jus for dipping.

Notes

Use unsalted butter to reduce sodium; shredded cheese melts more evenly than sliced cheese.
