- 8 oz thinly sliced roast beef (deli-style)
- 8 slices provolone or Swiss cheese (or shredded, about 1 1/2 cups)
- 1 small onion, thinly sliced (optional, for sweetness)
- 2 cups beef broth (low-sodium works fine)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon soy sauce (optional for color and depth)
- 1 tablespoon butter
- 1 teaspoon cornstarch mixed with 1 tablespoon cold water (to thicken slightly, optional)
- 1 teaspoon garlic powder
- 1 packet (about 1 oz) dry onion soup mix (optional for extra flavor)
- Cooking spray or 1 tablespoon melted butter for brushing
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment and lightly spray or brush with melted butter.
- Warm the tortillas in a dry skillet or microwave for 10–15 seconds.
- Lay one tortilla flat, add roast beef, cheese, onion slices (if using), and sprinkle with garlic powder.
- Roll the tortilla tightly from one end to the other and place seam-side down on the baking sheet.
- Brush the tops with melted butter or spray with cooking spray.
- Bake for 10–12 minutes until cheese melts and tortillas are lightly golden. Broil for 1 minute for extra crispness if desired.
- Meanwhile, prepare the dipping jus by combining beef broth, Worcestershire, soy sauce, and onion soup mix in a saucepan. Simmer and stir in cornstarch slurry if desired.
- Serve hot with jus for dipping.
Notes
Use unsalted butter to reduce sodium; shredded cheese melts more evenly than sliced cheese.
