- 2 1/4 teaspoons active dry yeast
- 1/2 cup warm milk (between 100°F and 110°F)
- 1/3 cup granulated sugar
- 1/4 cup butter, melted
- 1 large egg (room temperature)
- 1 tablespoon lemon zest (freshly grated)
- 2 tablespoons lemon juice (freshly squeezed)
- 1/2 teaspoon salt
- 3 1/2 to 4 cups all-purpose flour
- 3 tablespoons poppy seeds
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, dissolve the yeast in warm milk with a pinch of sugar. Let it sit for 5 minutes until foamy.
- Combine the sugar, melted butter, egg, lemon zest, lemon juice, and salt in a large mixing bowl. Add the yeast mixture and mix well.
- Gradually mix in the flour until a soft dough forms.
- Knead on a floured surface for about 5-7 minutes. This improves the dough’s texture.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and roll it out into a rectangle.
- Sprinkle the dough with poppy seeds, roll it tightly, and slice into individual rolls.
- Place the rolls in a greased baking pan, cover, and let them rise for another 30-40 minutes.
- Bake for 20-25 minutes until golden. They smell heavenly when ready!
