Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk (between 100°F and 110°F)
  • 1/3 cup granulated sugar
  • 1/4 cup butter, melted
  • 1 large egg (room temperature)
  • 1 tablespoon lemon zest (freshly grated)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/2 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour
  • 3 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, dissolve the yeast in warm milk with a pinch of sugar. Let it sit for 5 minutes until foamy.
  3. Combine the sugar, melted butter, egg, lemon zest, lemon juice, and salt in a large mixing bowl. Add the yeast mixture and mix well.
  4. Gradually mix in the flour until a soft dough forms.
  5. Knead on a floured surface for about 5-7 minutes. This improves the dough’s texture.
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  7. Punch down the dough and roll it out into a rectangle.
  8. Sprinkle the dough with poppy seeds, roll it tightly, and slice into individual rolls.
  9. Place the rolls in a greased baking pan, cover, and let them rise for another 30-40 minutes.
  10. Bake for 20-25 minutes until golden. They smell heavenly when ready!
