- 2 chicken breasts (grilled)
- 4 cups mixed greens
- 1 cucumber, sliced
- 1 bell pepper, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your grill to medium heat. Season the chicken breasts with salt and pepper.
- Grill for about 6-7 minutes per side or until cooked through. Remove from grill and let rest before slicing.
- Combine in a large bowl mixed greens, cucumber, bell pepper, cherry tomatoes, and red onion.
- Whisk together olive oil and balsamic vinegar in a small bowl. Season with salt and pepper.
