A baked casserole marrying lean ground turkey with roasted sweet potato ribbons, herbs, and a light savory sauce.

- 1 1/2 lb sweet potatoes (about 2–3 medium), peeled and cut into 1/4-inch rounds
- 1 lb ground turkey, preferably 93/7
- 1 small yellow onion, finely diced (about 3/4 cup)
- 2 garlic cloves, minced (about 2 teaspoons)
- 2 tbsp olive oil, divided
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 cup low-sodium chicken stock
- 1 tbsp Dijon mustard
- Kosher salt and freshly ground black pepper, to taste
- 2 tbsp unsalted butter, cold cubes
- 1/4 cup panko breadcrumbs or finely chopped pecans
- 2 tbsp fresh parsley, finely chopped
- Optional: 2 oz crumbled goat cheese or feta
Instructions
- Preheat the oven to 400°F (200°C). Arrange sweet potato rounds on a rimmed baking sheet, toss with 1 tbsp olive oil, salt, and pepper. Roast for 20–25 minutes, until edges caramelize and slices are tender.
- Meanwhile, heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add the onion and cook until translucent, about 3–4 minutes. Stir in garlic and cook for an additional 30 seconds.
- Add ground turkey, season with smoked paprika, cumin, salt, and pepper. Cook until browned, about 6–8 minutes.
- Stir in Dijon and chicken stock; simmer for 2–3 minutes until slightly reduced.
- In a baking dish, layer half the sweet potatoes, then add the turkey mixture, and top with remaining sweet potatoes. Dot with butter, sprinkle with panko or pecans, and add cheese if using.
- Bake until topping is golden and bubbling, about 15–20 minutes. Let rest for 8 minutes before serving.
Notes
For a refined presentation, serve with a small herb salad and a drizzle of extra-virgin olive oil.
