Ingredients

- 8 oz tortellini
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup olives, sliced
- 1/2 red onion, diced
- 1 cup baby spinach
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions; drain and let cool.
- In a large bowl, combine the tortellini, cherry tomatoes, cucumber, bell pepper, olives, red onion, spinach, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill in the fridge for 30 minutes before serving.
Notes
For best results, keep the dressing separate until ready to serve. Allow the salad to chill for at least 30 minutes to let the flavors meld.
