- 1 cup black beans, drained and rinsed
- 2 large eggs
- 1/2 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Combine black beans, eggs, cocoa powder, honey, peanut butter, vanilla extract, baking powder, and salt in a food processor and blend until smooth.
- Stir in chocolate chips if using.
- Spread the brownie batter evenly in the prepared baking pan.
- Bake for 20-25 minutes and check doneness with a toothpick.
- Allow the brownies to cool before cutting into squares.
Notes
Serve warm or at room temperature, optionally with Greek yogurt or fresh fruit. Store in an airtight container in the refrigerator for up to a week.
