- 2 ripe plantains
- 2 cups fresh spinach
- 1 avocado

Instructions
- Preheat your oven to 375°F (190°C).
- Mix olive oil and fresh herbs in a bowl. Brush the mixture over the salmon fillets and season with salt and pepper.
- Place the salmon on a baking sheet and bake for 15-20 minutes or until cooked through.
- Peel and slice the plantains. In a skillet, heat a bit of oil over medium heat and sauté the plantains until golden and soft.
- Sauté the spinach in another skillet until wilted.
- Slice the avocado.
- Serve the salmon alongside the sweet plantains, sautéed spinach, and avocado slices, garnished with lemon wedges.
