Description

A quick and satisfying meal featuring tender chicken, orzo pasta, and fresh asparagus in a creamy sauce.


Ingredients

  • 1 cup orzo pasta
  • 1 pound chicken breast, diced
  • 1 cup asparagus, chopped
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder, Parmesan cheese for topping

Instructions

  1. Heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the diced chicken breast, seasoning it with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
  3. Stir in the chopped asparagus and cook for an additional 2-3 minutes.
  4. Pour in the orzo pasta and chicken broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer for 10-12 minutes, or until the orzo is tender.
  6. Stir in the heavy cream and shredded cheese until melted into a creamy sauce.
  7. Adjust seasoning to taste and serve hot, optionally topped with Parmesan cheese.

Notes

For added flavor, sauté some garlic in the olive oil before adding the chicken. Can substitute chicken with ground turkey or tofu.
