Description

A cozy, high-protein recipe with tender turkey meatballs in a creamy sauce, featuring spinach and sun dried tomatoes.


Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 1/3 cup grated parmesan
  • 23 tbsp almond flour or oat flour (optional)
  • 23 tbsp breadcrumbs (optional)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder (or 2 cloves fresh garlic, grated)
  • 1 tsp onion powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • Pinch of crushed red pepper (optional)
  • 2 tbsp butter or olive oil
  • 2 sun dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups spinach

Instructions

  1. Mix turkey, egg, parmesan, and optional ingredients in a bowl until just combined.
  2. Form the mixture into meatballs.
  3. Heat butter or olive oil in a skillet over medium heat.
  4. Cook meatballs until browned on all sides.
  5. Add garlic and sun dried tomatoes to the skillet.
  6. Pour in chicken broth and cream, then let simmer.
  7. Stir in spinach and cook until wilted.
  8. Serve warm with your choice of side.

Notes

For a lower carb version, serve with zucchini noodles or roasted cauliflower. You can also double the recipe easily by cooking in batches.
