A cozy, high-protein recipe with tender turkey meatballs in a creamy sauce, featuring spinach and sun dried tomatoes.
Ingredients

- 1 lb ground turkey
- 1 egg
- 1/3 cup grated parmesan
- 2–3 tbsp almond flour or oat flour (optional)
- 2–3 tbsp breadcrumbs (optional)
- 1 tsp Italian seasoning
- 1 tsp garlic powder (or 2 cloves fresh garlic, grated)
- 1 tsp onion powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- Pinch of crushed red pepper (optional)
- 2 tbsp butter or olive oil
- 2 sun dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cups spinach
Instructions
- Mix turkey, egg, parmesan, and optional ingredients in a bowl until just combined.
- Form the mixture into meatballs.
- Heat butter or olive oil in a skillet over medium heat.
- Cook meatballs until browned on all sides.
- Add garlic and sun dried tomatoes to the skillet.
- Pour in chicken broth and cream, then let simmer.
- Stir in spinach and cook until wilted.
- Serve warm with your choice of side.
Notes
For a lower carb version, serve with zucchini noodles or roasted cauliflower. You can also double the recipe easily by cooking in batches.
