A creamy and satisfying chicken salad made with Greek yogurt, packed with protein and perfect for meal prep.
Ingredients

- 2 to 3 cups cooked chicken, chopped or shredded
- 1/2 to 3/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard (optional)
- 1 to 2 celery stalks, finely chopped
- 2 tablespoons red onion or green onion, chopped
- 1 to 2 tablespoons fresh dill or parsley (or both)
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- Optional add-ins: grapes, chopped nuts, diced apple, pickles
Instructions
- Add chicken to a big bowl. I like bite-size pieces so every scoop feels balanced.
- Add Greek yogurt, mustard, lemon juice, herbs, celery, and onion.
- Stir until everything is coated. If it looks dry, add another spoon of yogurt.
- Taste it. This is where you adjust. Add more salt, pepper, lemon, or dill until it pops.
- Chill for 10 to 20 minutes if you have time. The flavor gets better after it sits.
