Description
A cozy weeknight meal featuring buttery, garlicky steak bites and crisp tender asparagus, perfect for a quick dinner.
Ingredients
Scale
- 1 pound sirloin steak, cut into bite-size cubes
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 bunch asparagus, cut into thirds
- Salt, to taste
- Pepper, to taste
- 1 teaspoon paprika (optional)
- Juice of 1 lemon
- Base of choice (quinoa, rice, cauliflower rice, etc.)
Instructions
- Cut the steak into bite size cubes. Pat them dry with paper towels so they brown well.
- Season with salt, pepper, and a little paprika if you like a warm kick.
- Heat a large skillet until it is hot, then add a little oil.
- Sear the steak bites in a single layer. Do not crowd the pan. Brown them for a couple minutes per side, then pull them out onto a plate.
- Lower the heat a bit and add butter and garlic. Stir fast so the garlic smells amazing but does not burn.
- Add asparagus pieces and cook until bright green and crisp tender. Splash in a little water if the pan looks dry.
- Return the steak to the pan, squeeze in lemon, and toss everything for 30 to 60 seconds.
- Spoon it into bowls with your base of choice and drizzle the lemon garlic butter on top.
Notes
For best results, avoid crowding the pan and make sure the steak is dry before cooking. Adjust cook times based on your preferred level of doneness.
