- ½ cup all-purpose flour
- 1 cup granulated sugar
- ¼ cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1 ½ cups whole milk
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 4 large eggs (preferably at room temperature)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish.
- Blend the melted butter, sugar, eggs, flour, lemon juice, lemon zest, whole milk, vanilla, and salt in a blender until smooth.
- Pour the blended mixture into the prepared pie dish.
- Bake for 35–40 minutes until the top is golden brown and the center jiggles slightly.
- Cool the pie at room temperature, allowing the layers to separate, then slice and serve.
Notes
Serve chilled with a sprinkle of powdered sugar or a dollop of whipped cream. Fresh berries complement the pie beautifully.
