- 6 boneless, skinless chicken thighs, cubed
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp parsley
- 1 tsp chili flakes
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 3/4 cup mayonnaise
- 1/2 cup Thai chili sauce
- 1 tbsp fresh parsley, chopped
- A pinch of salt
Instructions
- Soak wooden skewers in water for 20-30 minutes.
- Prepare the chicken by dicing it into bite-sized cubes.
- Marinate chicken with olive oil, garlic powder, smoked paprika, parsley, chili flakes, lemon juice, salt, and pepper.
- Take each soaked skewer and thread 5-7 pieces of marinated chicken onto it.
- Mix the mayonnaise, Thai chili sauce, chopped parsley, and a pinch of salt in a separate bowl until smooth.
- Coat the chicken skewers with the remaining sauce.
- Line a baking sheet with parchment paper and place the skewers in a single layer.
- Bake in a preheated oven at 400°F for 20-25 minutes, flipping halfway, until chicken reaches 165°F.
- Remove the skewers from the oven and brush with reserved sauce.
Notes
For variations, try adding bell peppers or onions to the skewers or substitute chicken thighs with chicken breasts for a leaner option.
