  • 1 1⁄2 lb baby potatoes (halved or quartered)
  • 12 oz fresh green beans (trimmed)
  • 4 tablespoons butter (divided, softened)
  • 3 tablespoons olive oil (divided)
  • 4 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper (to taste)
  • 1⁄2 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the steak dry, then season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  3. Toss the baby potatoes with 2 tablespoons of olive oil, salt, pepper, paprika, and Italian seasoning. Roast them on the baking sheet for 25-30 minutes or until golden brown and tender.
  4. In a skillet, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat. Add the green beans and garlic, sautéing for 6-8 minutes until vibrant and tender.
  5. In the same skillet, increase the heat to medium-high and sear the steak for 3-5 minutes on each side, depending on your preferred doneness.
  6. Let the steak rest for 5 minutes before slicing. Serve it with the roasted potatoes and sautéed green beans.
