- 8 oz pasta of your choice
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- Grated Parmesan cheese, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Start by cooking the pasta according to the package instructions. Drain the pasta and set it aside while preparing the other components.
- In a large skillet over medium heat, melt the butter until bubbly and fragrant.
- Season the chicken breasts generously with salt and pepper. Place them in the skillet and cook until golden brown and cooked through, roughly 6-7 minutes per side. Once done, remove from the skillet and let rest before slicing.
- In the same skillet, add the minced garlic and sauté for about 1 minute, or until it’s fragrant.
- Stir in the lemon zest and juice, mixing well to combine and deglaze the pan.
- Return the sliced chicken to the skillet along with the cooked pasta. Toss everything together until well coated with the lemon sauce.
- Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the microwave or on the stovetop.
