Description

This dish merges succulent chicken and perfectly cooked pasta with a buttery lemon sauce, creating a dish that’s bursting with flavor.


Ingredients

  • 8 oz pasta of your choice
  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Grated Parmesan cheese, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Start by cooking the pasta according to the package instructions. Drain the pasta and set it aside while preparing the other components.
  2. In a large skillet over medium heat, melt the butter until bubbly and fragrant.
  3. Season the chicken breasts generously with salt and pepper. Place them in the skillet and cook until golden brown and cooked through, roughly 6-7 minutes per side. Once done, remove from the skillet and let rest before slicing.
  4. In the same skillet, add the minced garlic and sauté for about 1 minute, or until it’s fragrant.
  5. Stir in the lemon zest and juice, mixing well to combine and deglaze the pan.
  6. Return the sliced chicken to the skillet along with the cooked pasta. Toss everything together until well coated with the lemon sauce.
  7. Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the microwave or on the stovetop.
