- 2 pieces boneless skinless chicken breast
- 2 tablespoons olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon chili powder
- 1 clove garlic (minced)
- 1 teaspoon salt

- 2 cups cooked rice
- 1 cup hummus
- 1 large cucumber (diced)
- 1 large tomato (diced)
- 1/2 small red onion (thinly sliced)
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon red wine vinegar
- 4 wedges lemon
Instructions
- Whisk together the olive oil, lemon juice, chili powder, garlic, salt, and pepper in a bowl.
- Add the chicken to the marinade, toss to coat, cover, and refrigerate for at least 20 minutes.
- Preheat your grill or grill pan to medium-high heat, then grill the chicken for 6 to 7 minutes per side until cooked through, reaching an internal temperature of 165°F.
- Remove the chicken from the grill, let it rest for 5 minutes, then slice it into strips.
- Combine the cucumber, tomato, red onion, parsley, olive oil, and vinegar in a bowl while the chicken is grilling. Season with salt and pepper.
- Divide the rice among bowls, then top each with a scoop of hummus, sliced chicken, and fresh cucumber salad.
- Garnish with lemon wedges and serve immediately.
