Ingredients

  • 1 pre-made pizza dough (whole wheat or traditional)
  • 1 tablespoon olive oil (extra virgin)
  • 1 tablespoon lemon juice (freshly squeezed)
  • Zest of 1 lemon
  • 1 cup fresh mozzarella cheese (sliced)
  • 1/4 cup parmesan cheese (grated)
  • 1 tablespoon fresh basil (finely chopped)
  • 1 tablespoon fresh parsley (finely chopped)
  • 1/2 teaspoon red pepper flakes
  • Sea salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 475°F (245°C) and place a pizza stone inside to warm.
  2. On a floured surface, roll out the pizza dough into a 12-inch circle, ensuring it has a slightly thicker edge for the crust.
  3. In a small bowl, whisk together the olive oil, lemon juice, and zest.
  4. Transfer the rolled dough onto a pizza peel dusted with flour. Brush the sauce evenly across the surface, leaving the edges free for the crust.
  5. Layer the mozzarella slices across the pizza, followed by an even sprinkle of parmesan. Finish with fresh herbs, red pepper flakes, and a sprinkle of sea salt and black pepper.
  6. Carefully slide the pizza from the peel onto the hot pizza stone. Bake for 10-12 minutes, or until the cheese is bubbling and the crust is golden brown.
  7. Remove from the oven and let it cool for a minute before slicing.

Notes

For a more gourmet touch, substitute burrata for mozzarella or add slices of ripe heirloom tomatoes.
