A cozy and nourishing turkey soup that is healthy, filling, and perfect for meal prep.
Ingredients

- 1 lb ground turkey
- 1 can white beans (Cannellini or Great Northern), rinsed and drained
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth (or turkey/vegetable broth)
- 1 can diced tomatoes (optional)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 cups spinach or kale (optional)
- Juice of 1 lemon
Instructions
- Brown the turkey. Heat a big pot over medium heat with a tiny drizzle of olive oil. Add the ground turkey and break it up. Let it cook until it is no longer pink.
- Add the aromatics. Stir in chopped onion, carrots, and celery. Cook for about 5 minutes. Add garlic and stir for 30 seconds.
- Season it. Add Italian seasoning, black pepper, and a pinch of salt. Let it cook a bit to release the aromas.
- Build the broth. Pour in the broth and add diced tomatoes if using. Bring it to a gentle simmer.
- Add the beans. Stir in the rinsed white beans. Let everything simmer for 15 to 20 minutes for the flavors to meld.
- Finish strong. Stir in spinach for the last couple of minutes until it wilts. Taste and adjust seasoning and add lemon juice.
Notes
This soup is great for meal prep and can be frozen for up to 3 months. Adjust seasonings according to your taste preferences.
