A quick and easy one-pan Mediterranean Chicken and Tortellini recipe, perfect for busy weeknights.

- 2 chicken breasts
- 1 cup basil pesto
- 1 package cheesy tortellini
- 1 bunch asparagus, trimmed
- 1 cup cherry tomatoes, halved
- Olive oil (just a drizzle)
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper and add them to the skillet. Cook until golden and fully cooked, about 6-7 minutes per side.
- Remove the chicken from the skillet and set it aside.
- Add the tortellini and cook according to package instructions.
- Toss in the asparagus and cherry tomatoes during the last few minutes of cooking the tortellini.
- Return the chicken to the skillet once the tortellini is cooked and the veggies are tender.
- Coat everything with the basil pesto and stir to combine.
- Serve hot.
Notes
For extra creaminess, add a splash of cream while mixing in the pesto.
