- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups enchilada sauce
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
Instructions
- Begin by browning the ground beef in a large skillet over medium heat until it’s thoroughly cooked.
- Add the diced onion and bell pepper to the pan, sautéing them until they soften, about 3–4 minutes.
- Next, stir in the black beans, corn, enchilada sauce, cumin, chili powder, and season with salt and pepper.
- Allow the mixture to come to a simmer, then reduce the heat to low to let the flavors meld together for about 5-10 minutes.
- Sprinkle the shredded cheese on top of the beef mixture and cover the skillet with a lid until the cheese melts.
- Once the cheese is melted, garnish with fresh cilantro if desired and serve warm.
Notes
For added flavor, consider browning the beef with minced garlic. You can also swap ground beef with ground turkey or chicken for a lighter option.
