- 4 medium potatoes, cubed
- 1 large onion, sliced

- Salt and pepper to taste

Instructions
- Preheat a large skillet over medium heat.
- Add olive oil and the sliced smoked sausage. Cook until browned.
- Add cubed potatoes and sliced onion to the pan.
- Season with garlic powder, paprika, salt, and pepper.
- Stir well and cover. Cook for about 15-20 minutes, stirring occasionally, until potatoes are tender.
- Garnish with fresh parsley if desired. Serve warm.
Notes
Avoid overcrowding the pan to achieve that perfect crisp. You can prepare it ahead and reheat later.
