- 1 cup orzo pasta
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh parsley for garnish
Instructions
- Brown the Italian sausage: In a large skillet, heat over medium heat and add the Italian sausage. Cook it until it’s browned, breaking it apart as you go.
- Sauté the onion and garlic: Add to the skillet and sauté for about 3-4 minutes until they become soft and fragrant.
- Add the bell pepper and zucchini: Stir in the diced vegetables, cooking for an additional 3 minutes.
- Combine the orzo and broth: Now, add orzo pasta, chicken broth, Italian seasoning, salt, and pepper. Stir to ensure everything is well mixed.
- Bring to a boil: Turn up the heat and let the mixture come to a boil. Reduce heat to low and let it simmer for about 10-12 minutes.
- Serve: Once ready, serve warm topped with Parmesan cheese and fresh parsley.
