Instructions
- Prepare the Syrup: In a medium saucepan, mix the apple cider vinegar, granulated sugar, and lemon juice. Heat the mixture over medium-high until it boils, stirring continuously to dissolve the sugar completely.
- Simmer the Syrup: Once boiling, lower the heat and let the syrup simmer gently for about 5 minutes.
- Add the Fruits: Carefully stir in the diced pineapple and sliced jalapeños. Ensure they are well-coated in the syrup.
- Cook the Mixture: Continue to simmer this mixture on low heat for 10 to 15 minutes until the jalapeños soften and the pineapple absorbs the syrup’s flavor.
- Cool Down: Remove the saucepan from heat and allow the mixture to cool down to room temperature.
- Store It: Transfer the Pineapple Cowboy Candy into clean, sterilized jars or airtight containers. Store in the refrigerator for at least 24 hours.
