Description

A classic dessert featuring caramelized pineapple atop a moist, buttery cake, ideal for any occasion.


Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar (packed)
  • 1/4 cup unsalted butter (melted)
  • 1 can (20 oz) pineapple slices (drained)
  • Maraschino cherries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a small bowl, combine melted butter and brown sugar, mix well, then pour into the prepared pan. Arrange pineapple slices on top with a cherry in the center of each.
  3. Cream the softened butter and granulated sugar in a mixing bowl until light and fluffy, about 3–5 minutes.
  4. Add eggs one at a time, mixing well after each. Stir in the vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until just combined.
  6. Pour the batter over the pineapple slices in the pan and smooth the top. Bake for 40–45 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before inverting onto a serving plate.

Notes

Serve warm with mint leaves, vanilla ice cream, or whipped cream. Store covered at room temperature for up to three days or refrigerate for longer preservation.
