- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions (reserve some for garnish)
- 4 cups coleslaw mix
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha (adjust to taste)
Instructions
- Cook the Lo Mein noodles according to the package instructions. Once done, rinse them under cold water and set aside.
- Brown the pork: In a large skillet, heat the peanut oil over medium heat. Add the ground pork along with 1/4 cup of the sliced green onions. Cook until browned, about 5 minutes, breaking up the meat as it cooks.
- Prepare the sauce by whisking together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a bowl.
- Combine the rinsed noodles and coleslaw mix with the pork in the skillet, followed by the sauce. Toss for 2-3 minutes until well-coated and heated through.
- Garnish with remaining sliced green onions. Serve immediately and enjoy!
Notes
Customize your meats by swapping ground pork for chicken or turkey. Add extra veggies for more crunch. Adjust the spiciness to your taste.
