Description

Quick and easy crunchy snacks made from red lentils, packed with protein and flavor.


Ingredients

Scale
  • 200 g red lentils (rinsed and drained)
  • ¾ tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp rosemary
  • 1 tsp paprika
  • ½ tsp salt
  • 3 tbsp sunflower seeds
  • 3 tbsp sesame seeds
  • 35 ml olive oil

Instructions

  1. Preheat your oven to 180 °C (356 °F) with the fan on.
  2. Grind the red lentils in a blender or food processor until you have a fine flour.
  3. Combine the lentil flour with the baking powder, garlic powder, rosemary, paprika, salt, sunflower seeds, and sesame seeds in a mixing bowl. Mix in the olive oil and 100 ml of water to form a thick dough.
  4. Line a baking sheet with parchment paper. Place the dough on the sheet, then cover it with another piece of parchment paper. Roll out the dough evenly with a rolling pin.
  5. Remove the top layer of parchment paper. Cut the dough into your preferred shapes using a sharp knife or pizza cutter.
  6. Bake on the middle rack for 25-30 minutes until crispy. Let them cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to a week. For longer storage, freeze the crackers and thaw at room temperature before serving.
