Quick and easy crunchy snacks made from red lentils, packed with protein and flavor.
Ingredients

- 200 g red lentils (rinsed and drained)
- ¾ tsp baking powder
- 1 tsp garlic powder
- 1 tsp rosemary
- 1 tsp paprika
- ½ tsp salt
- 3 tbsp sunflower seeds
- 3 tbsp sesame seeds
- 35 ml olive oil
Instructions
- Preheat your oven to 180 °C (356 °F) with the fan on.
- Grind the red lentils in a blender or food processor until you have a fine flour.
- Combine the lentil flour with the baking powder, garlic powder, rosemary, paprika, salt, sunflower seeds, and sesame seeds in a mixing bowl. Mix in the olive oil and 100 ml of water to form a thick dough.
- Line a baking sheet with parchment paper. Place the dough on the sheet, then cover it with another piece of parchment paper. Roll out the dough evenly with a rolling pin.
- Remove the top layer of parchment paper. Cut the dough into your preferred shapes using a sharp knife or pizza cutter.
- Bake on the middle rack for 25-30 minutes until crispy. Let them cool completely.
Notes
Store leftovers in an airtight container at room temperature for up to a week. For longer storage, freeze the crackers and thaw at room temperature before serving.
