- 1 slice crusty bread
- 1 cup cherry tomatoes
- 1 egg
- 1 tbsp cream cheese (softened) or ricotta (room temperature)
- 1 tbsp olive oil
- Fresh microgreens
- Handful of green olives
- Salt
- Black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss cherry tomatoes with olive oil, salt, and pepper, then roast until blistered, about 20 minutes.
- Toast the bread until golden and crisp, then spread cream cheese on it.
- Fry the egg sunny-side up in a non-stick pan until the whites are set, about 2-3 minutes.
- Top the toast with roasted tomatoes and sprinkle with fresh microgreens.
- Serve with the egg and olives on the side, sprinkle with pepper, and drizzle a little olive oil.
Notes
Watch the tomatoes closely while roasting; you want them blistered but not burned. Use day-old bread for a crunchier texture.
