Description

A flavorful dish combining crispy bread, juicy roasted tomatoes, and a fried egg, perfect for breakfast or a cozy meal.


Ingredients

  • 1 slice crusty bread
  • 1 cup cherry tomatoes
  • 1 egg
  • 1 tbsp cream cheese (softened) or ricotta (room temperature)
  • 1 tbsp olive oil
  • Fresh microgreens
  • Handful of green olives
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss cherry tomatoes with olive oil, salt, and pepper, then roast until blistered, about 20 minutes.
  3. Toast the bread until golden and crisp, then spread cream cheese on it.
  4. Fry the egg sunny-side up in a non-stick pan until the whites are set, about 2-3 minutes.
  5. Top the toast with roasted tomatoes and sprinkle with fresh microgreens.
  6. Serve with the egg and olives on the side, sprinkle with pepper, and drizzle a little olive oil.

Notes

Watch the tomatoes closely while roasting; you want them blistered but not burned. Use day-old bread for a crunchier texture.
