Comforting and healthy stuffed potatoes filled with lean meat and veggies, topped with creamy mashed potatoes.
Ingredients

- 4 Russet potatoes (or sweet potatoes)
- 1 pound lean ground turkey (or extra lean beef)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 tablespoons tomato paste
- 1 cup low sodium broth (chicken or beef)
- 1 tablespoon Worcestershire sauce (optional)
- Salt, to taste
- Pepper, to taste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 cup Greek yogurt
- 1/2 cup shredded cheddar or mozzarella (optional)
Instructions
- Bake or microwave potatoes until soft.
- Cook lean meat with onions, garlic, and seasoning.
- Stir in veggies and sauce to make the filling.
- Scoop out a little potato, mash with Greek yogurt, then stuff it back in.
- Top with the meat mixture, add cheese if desired, and bake until hot.
Notes
Microwave the potatoes for quicker preparation. Use lentils for a vegetarian option. Store leftovers in the fridge for up to 4 days.
