Instructions
- Sauté the veggies: Heat the olive oil in a large skillet over medium heat. Add the chopped onion, green bell pepper, and minced garlic. Sauté until the onions are translucent and the peppers are softened, about 5 minutes.
- Brown the meat: Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a spatula as it cooks.
- Add the potatoes: Stir in the diced potatoes, ensuring they are well combined with the meat mixture. Cook for another 5 minutes, stirring occasionally.
- Make the sauce: In a bowl, mix together the ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper. Pour this sauce over the meat and potatoes in the skillet.
- Simmer: Cover the skillet and let it simmer on low heat for 15-20 minutes, or until the potatoes are tender. Stir occasionally and add a splash of water if it gets too thick.
- Add cheese: Once the potatoes are cooked, sprinkle shredded cheese on top. Cover again, allowing the cheese to melt for about 2-3 minutes.
- Garnish and serve: Remove from heat and sprinkle with fresh parsley before serving.
