- 3 to 4 pounds beef chuck roast, trimmed
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil, for searing
- 1 cup fresh cranberries, rinsed and drained
- 1 cup balsamic vinegar, high-quality
- 1/2 cup honey, preferably wildflower
- 2 garlic cloves, minced
- 1 tablespoon fresh thyme leaves, finely chopped
- Fresh parsley, finely chopped, for garnish
Instructions
- Season the beef chuck roast generously with salt and black pepper.
- In a heavy-bottomed pot, heat olive oil over medium-high heat. Add the beef and sear until deeply browned on all sides, about 4–5 minutes per side.
- In a separate saucepan, combine fresh cranberries, balsamic vinegar, honey, minced garlic, and thyme. Bring to a simmer over medium heat for about 10 minutes.
- Remove the beef from the pot. Pour the cranberry glaze into the pot, scraping up any browned bits.
- Return the beef to the pot, spooning some glaze over the top. Cover and braise in a preheated oven at 325°F (163°C) for 3–4 hours until fork-tender.
- Let the roast rest for 10 minutes before slicing. Drizzle additional glaze over the beef before serving.
Notes
Use high-quality balsamic vinegar for deeper flavor. Let the roast rest adequately to ensure juices redistribute.
