Description

Ingredients

  • 3 to 4 pounds beef chuck roast, trimmed
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil, for searing
  • 1 cup fresh cranberries, rinsed and drained
  • 1 cup balsamic vinegar, high-quality
  • 1/2 cup honey, preferably wildflower
  • 2 garlic cloves, minced
  • 1 tablespoon fresh thyme leaves, finely chopped
  • Fresh parsley, finely chopped, for garnish

Instructions

  1. Season the beef chuck roast generously with salt and black pepper.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Add the beef and sear until deeply browned on all sides, about 4–5 minutes per side.
  3. In a separate saucepan, combine fresh cranberries, balsamic vinegar, honey, minced garlic, and thyme. Bring to a simmer over medium heat for about 10 minutes.
  4. Remove the beef from the pot. Pour the cranberry glaze into the pot, scraping up any browned bits.
  5. Return the beef to the pot, spooning some glaze over the top. Cover and braise in a preheated oven at 325°F (163°C) for 3–4 hours until fork-tender.
  6. Let the roast rest for 10 minutes before slicing. Drizzle additional glaze over the beef before serving.

Notes

Use high-quality balsamic vinegar for deeper flavor. Let the roast rest adequately to ensure juices redistribute.
