Description

Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 medium carrots, peeled and diced
  • 3 medium potatoes, peeled and cubed
  • 1 large onion, finely chopped
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, finely chopped, for garnish

Instructions

  1. Prepare your ingredients by combining the chicken, carrots, potatoes, and onion in a large bowl.
  2. Transfer the mixture into the slow cooker.
  3. Whisk together the chicken broth, tomato paste, thyme, salt, and pepper in a separate bowl.
  4. Pour the sauce over the chicken and vegetables in the slow cooker.
  5. Cover and set the slow cooker to low for 6-8 hours, or high for 3-4 hours.
  6. Stir gently halfway through cooking to combine flavors.
  7. Once completed, the chicken should be tender and easily shredded with a fork.
  8. Serve with a sprinkle of freshly chopped parsley on top.

Notes
