Instructions
- Prepare your ingredients by combining the chicken, carrots, potatoes, and onion in a large bowl.
- Transfer the mixture into the slow cooker.
- Whisk together the chicken broth, tomato paste, thyme, salt, and pepper in a separate bowl.
- Pour the sauce over the chicken and vegetables in the slow cooker.
- Cover and set the slow cooker to low for 6-8 hours, or high for 3-4 hours.
- Stir gently halfway through cooking to combine flavors.
- Once completed, the chicken should be tender and easily shredded with a fork.
- Serve with a sprinkle of freshly chopped parsley on top.
