- 1 cup black beans, drained and rinsed
- 1 cup fire-roasted corn
- 1 cup bell pepper, diced
- 1/2 cup Greek yogurt
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large bowl, add the cooked chicken, black beans, fire-roasted corn, and diced bell pepper. Mix well.
- In a separate small bowl, combine Greek yogurt, chili powder, cumin, salt, and pepper. Stir until smooth.
- Pour the dressing over the chicken mixture and stir until evenly coated.
- Garnish with fresh cilantro if desired. Enjoy immediately or store in the fridge for up to three days.
Notes
To keep the salad fresh for longer, add the dressing just before serving. Customize with other veggies like avocado or cucumber, or add cheese or nuts for extra protein.
