Description

A flavorful and quick dip made with red lentils, perfect for snacking or entertaining.


Ingredients

Scale
  • 1 cup red lentils
  • 3 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt to taste
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Fresh herbs for garnish (optional)

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a pot, bring the lentils and water to a boil. Reduce heat and simmer for about 20 minutes or until lentils are tender.
  3. In a separate pan, heat olive oil over medium heat and sauté the onion until translucent.
  4. Add garlic, cayenne, cumin, and coriander, cooking for an additional 2 minutes.
  5. Drain the lentils and combine them with the onion mixture, adding lemon juice and salt to taste.
  6. Blend until smooth and creamy.
  7. Garnish with fresh herbs if desired and serve.

Notes

Serve with warm pita bread or fresh vegetable sticks. Store leftovers in the fridge for up to 4 days or freeze in portions.
