Description
A flavorful and quick dip made with red lentils, perfect for snacking or entertaining.
Ingredients

- 1 cup red lentils
- 3 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cayenne pepper
- 1 tsp cumin
- 1 tsp coriander
- Salt to taste
- 2 tbsp olive oil
- Juice of 1 lemon
- Fresh herbs for garnish (optional)
Instructions
- Rinse the red lentils under cold water until the water runs clear.
- In a pot, bring the lentils and water to a boil. Reduce heat and simmer for about 20 minutes or until lentils are tender.
- In a separate pan, heat olive oil over medium heat and sauté the onion until translucent.
- Add garlic, cayenne, cumin, and coriander, cooking for an additional 2 minutes.
- Drain the lentils and combine them with the onion mixture, adding lemon juice and salt to taste.
- Blend until smooth and creamy.
- Garnish with fresh herbs if desired and serve.
Notes
Serve with warm pita bread or fresh vegetable sticks. Store leftovers in the fridge for up to 4 days or freeze in portions.
