Description

Soft, fluffy scones bursting with fresh strawberries and the delightful aroma of vanilla.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1 cup fresh strawberries, chopped
  • 1 teaspoon vanilla bean paste or extract
  • 1/2 cup cold heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Fold in the chopped strawberries gently.
  5. Combine the heavy cream and vanilla bean paste in a separate bowl. Pour the cream mixture into the dry ingredients and stir until just combined.
  6. Turn the dough onto a floured surface and knead gently just until it comes together.
  7. Pat the dough into a circle about 1-inch thick and cut into wedges or use a round cutter.
  8. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  9. Serve warm with jam or whipped cream.
