Ingredients

- 2 teaspoons baking powder

- 1/2 cup cold butter, cubed
- 1 cup fresh strawberries, chopped
- 1 teaspoon vanilla bean paste or extract
- 1/2 cup cold heavy cream
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Fold in the chopped strawberries gently.
- Combine the heavy cream and vanilla bean paste in a separate bowl. Pour the cream mixture into the dry ingredients and stir until just combined.
- Turn the dough onto a floured surface and knead gently just until it comes together.
- Pat the dough into a circle about 1-inch thick and cut into wedges or use a round cutter.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
- Serve warm with jam or whipped cream.
Notes
Store in an airtight container for up to 3 days. For freezing, wrap each scone and place in a freezer bag.
