A cozy and healthy turkey meatball soup with zucchini noodles, perfect for any night of the week.
Ingredients

- 1 lb lean ground turkey
- 2 medium zucchini, spiralized
- 4 cups low sodium chicken broth
- 1 small onion, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1/4 cup breadcrumbs or almond flour
- 1 egg
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh herbs for garnish (optional)
Instructions
- Mix the turkey meatball mixture and shape into small meatballs.
- Brown meatballs in a pot with a little oil, then set aside.
- In the same pot, sauté onion, carrot, and celery for a few minutes.
- Add garlic, broth, herbs, and bring to a gentle simmer.
- Add meatballs back in and simmer until cooked through.
- Add zucchini noodles for the last few minutes.
- Taste, adjust salt and pepper, and finish with lemon or fresh herbs if desired.
Notes
Store soup in a sealed container in the fridge for 3 to 4 days. For meal prep, keep zoodles separate.
