Description

A quick and easy one-pan dish featuring ground turkey, fresh zucchini, and hearty chickpeas, perfect for busy weeknights!


Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 can chickpeas, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, and sauté until translucent.
  3. Add ground turkey and cook until browned.
  4. Stir in diced zucchini and chickpeas.
  5. Season with cumin, paprika, salt, and pepper.
  6. Cook until the zucchini is tender.
  7. Garnish with fresh parsley and serve.

Notes

Serve over rice or with a side salad. Store in an airtight container in the fridge for 3-4 days or freeze in portions. Avoid overcrowding the pan.
