Ingredients

- 1 lb ground turkey
- 2 medium zucchinis, diced
- 1 can chickpeas, rinsed and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, and sauté until translucent.
- Add ground turkey and cook until browned.
- Stir in diced zucchini and chickpeas.
- Season with cumin, paprika, salt, and pepper.
- Cook until the zucchini is tender.
- Garnish with fresh parsley and serve.
Notes
Serve over rice or with a side salad. Store in an airtight container in the fridge for 3-4 days or freeze in portions. Avoid overcrowding the pan.
