- 3 cups cooked chicken (shredded; rotisserie works great)
- 3 cups cooked egg noodles (about 6 oz dry)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crushed buttery crackers (such as Ritz)
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
- Cook the egg noodles according to the package directions. Once cooked, drain well.
- In a large mixing bowl, combine the shredded chicken, cooked noodles, cream of chicken soup, sour cream, and milk. Mix in the shredded cheese, frozen vegetables, and all seasonings until well combined.
- Transfer the chicken mixture into the prepared baking dish, spreading it out evenly.
- Mix the crushed crackers with melted butter in a separate bowl, then sprinkle this mixture evenly over the casserole.
- Bake the casserole for 25–30 minutes until hot and bubbly with a golden brown topping.
- Allow to cool slightly before serving.
Notes
Garnish with fresh herbs like parsley. Store leftovers in the refrigerator for up to three days. Can be made ahead of time and refrigerated until baking.
