Ingredients

  • 1 cup cherry tomatoes, halved

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Start by bringing the vegetable broth or water to a boil in a medium pot.
  2. Add the pearl couscous and cook it according to the package instructions, typically around 8-10 minutes or until it’s al dente.
  3. Drain the couscous and let it cool completely.
  4. Combine the cooled couscous with the halved cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, and fresh parsley in a large mixing bowl.
