Ingredients

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 ripe avocado, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • 1/2 cup thinly sliced red bell pepper
  • 2 stalks green onions, sliced
  • 1/4 cup chopped roasted peanuts
  • 3 tbsp fresh lime juice (freshly squeezed)
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 small red chili, finely chopped
  • 1 clove garlic, minced

Instructions

  1. Combine the shredded green cabbage, shredded red cabbage, and shredded carrots in a large bowl.
  2. Add the chopped cilantro, chopped mint leaves, sliced red bell pepper, and sliced green onions to the bowl.
  3. Whisk together the lime juice, fish sauce, soy sauce, honey, sesame oil, chopped red chili, and minced garlic in a small bowl until well blended.
  4. Pour the dressing over the vegetables and toss gently to coat evenly.
  5. Fold in the sliced avocado carefully to avoid mashing.
  6. Sprinkle the chopped roasted peanuts over the top and toss lightly to distribute.
  7. Serve immediately or chill for 15 minutes for a more refreshing taste.
