Description

A cozy and delicious Whole30 White Chicken Chili that’s creamy, packed with protein, and filled with wholesome ingredients.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup cauliflower florets
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Sauté the onion and garlic in a large pot over medium heat until softened, about 5 minutes.
  2. Add the chicken breasts and cook until browned on all sides.
  3. Stir in the white beans, diced tomatoes, chicken broth, cauliflower, cumin, chili powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 25-30 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Serve hot, garnished with cilantro.

Notes

Don’t overcook the chicken; it should shred easily but remain moist. For added heat, sprinkle in cayenne pepper or sliced jalapeños. Feel free to add more veggies for extra nutrition.
