- 1 pound boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 cup cauliflower florets
- 2 teaspoons cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Cilantro for garnish
Instructions
- Sauté the onion and garlic in a large pot over medium heat until softened, about 5 minutes.
- Add the chicken breasts and cook until browned on all sides.
- Stir in the white beans, diced tomatoes, chicken broth, cauliflower, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 25-30 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Serve hot, garnished with cilantro.
Notes
Don’t overcook the chicken; it should shred easily but remain moist. For added heat, sprinkle in cayenne pepper or sliced jalapeños. Feel free to add more veggies for extra nutrition.
