Description

A cozy treat that combines the sweetness of ripe bananas with the moisture of shredded zucchini, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup shredded zucchini
  • 1/2 cup melted butter (softened)
  • 1 cup sugar
  • 1 egg, beaten (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the mashed bananas with melted butter in a mixing bowl.
  3. Stir in the sugar, beaten egg, and vanilla extract until well mixed.
  4. Add the shredded zucchini and mix until combined.
  5. Whisk together the baking soda, salt, and flour in another bowl. Gradually add the dry ingredients to the banana-zucchini mixture, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
