- 2 lbs ground beef (80/20 recommended for juiciness)
- 1 cup fresh bread crumbs (or use crushed saltine crackers)
- 1 medium onion, finely chopped
- 1 small green bell pepper, finely chopped (optional)
- 2 large eggs
- 1 cup milk
- 2 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 tbsp Worcestershire sauce
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tsp mustard (yellow or Dijon)
- 1 tbsp apple cider vinegar
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
- Add ground beef, bread crumbs, chopped onion, bell pepper (if using), eggs, milk, salt, black pepper, garlic powder, and Worcestershire sauce to a large mixing bowl. Mix gently until combined.
- Transfer the meat mixture to the prepared loaf pan, shaping into a smooth loaf.
- Whisk together ketchup, brown sugar, mustard, and apple cider vinegar in a small bowl. Spoon half of this mixture over the meatloaf.
- Bake for about 45 minutes, then spread the remaining sauce over the top and bake for an additional 15 minutes. Total baking time is 1 hour.
- Let the meatloaf rest for 10 minutes before slicing to redistribute the juices.
Notes
Serve warm with mashed potatoes or steamed vegetables. Leftovers can be refrigerated for up to 3 days.
