Description

This creamy gnocchi with smoked salmon and spinach is your new go-to dish for cozy nights, featuring rich flavors and a comforting texture.


Ingredients

  • 1 medium onion, diced
  • 2 tbsp olive oil
  • 250 g fresh spinach, chopped
  • 100 g cream cheese (softened)
  • 2 tbsp milk (room temperature)
  • 1 tbsp fresh lemon juice (or substitute with vinegar)
  • 23 tsp capers, drained
  • 100 g smoked salmon, sliced
  • 250 g potato gnocchi, to serve

Instructions

  1. Start by peeling and slicing the onion. Heat the olive oil in a large skillet over medium heat. Cook the onion for 3-5 minutes until it softens and starts to brown.
  2. While the onion cooks, remove the stalks from the spinach, wash the leaves thoroughly, and shred them coarsely. Add the spinach to the skillet and cook, stirring for a few minutes until wilted.
  3. Lower the heat and stir in the cream cheese and milk. Mix well until combined. Add the lemon juice and capers, cover, and remove from heat.
  4. Cook the gnocchi according to the package directions, usually about 2-3 minutes.
  5. Slice the smoked salmon into thin strips. Stir it into the spinach sauce right at the end. Serve with the gnocchi and enjoy!

Notes

Serve with a side salad and crisp white wine. Garnish with extra capers and lemon zest for a vibrant finish.
