- 1 medium onion, diced
- 2 tbsp olive oil
- 250 g fresh spinach, chopped
- 100 g cream cheese (softened)
- 2 tbsp milk (room temperature)
- 1 tbsp fresh lemon juice (or substitute with vinegar)
- 2–3 tsp capers, drained
- 100 g smoked salmon, sliced
- 250 g potato gnocchi, to serve
Instructions
- Start by peeling and slicing the onion. Heat the olive oil in a large skillet over medium heat. Cook the onion for 3-5 minutes until it softens and starts to brown.
- While the onion cooks, remove the stalks from the spinach, wash the leaves thoroughly, and shred them coarsely. Add the spinach to the skillet and cook, stirring for a few minutes until wilted.
- Lower the heat and stir in the cream cheese and milk. Mix well until combined. Add the lemon juice and capers, cover, and remove from heat.
- Cook the gnocchi according to the package directions, usually about 2-3 minutes.
- Slice the smoked salmon into thin strips. Stir it into the spinach sauce right at the end. Serve with the gnocchi and enjoy!
Notes
Serve with a side salad and crisp white wine. Garnish with extra capers and lemon zest for a vibrant finish.
